Carrot Raisin Layer Cake

Preheat oven to 350 degrees

Ingredients :- Spice Cake Batter Mix, 4 large eggs (room temp), 2 sticks butter (softened), 1 cup milk (room temp.)

  • In electric mixing bowl above ingredients medium speed for 3 minutes until all ingredients are well blended.
  • Stir in: 1 cup chopped raisins 2 cups grated fine carrots Pour batter in 3 greased and floured 9 inch baking pans. Bake for 25 minutes until golden brown or test with toothpick in center.
  • Let cool for 10 minutes and remove from baking pans.

 Cream Cheese Frosting

Ingredients :- 5 cups confectioner sugar, 8 oz package cream cheese, softened, 2 sticks butter, softened 1 tablespoon vanilla, ¼ cup milk (room temp.)

  • In mixing bowl mix all ingredients together until fluffy.
